Veggie Wedges 4 Ways
Enjoy a variety of delicious veggie wedges with this simple recipe. Perfect as a snack, appetizer, or side dish!
Ingredients:
- 4 large potatoes
- 1 sweet potato
- 1 zucchini
- 1 eggplant
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
Preheat the oven to 425F 220C
Wash and scrub the potatoes, sweet potato, zucchini, and eggplant
Pat them dry
Cut the potatoes and sweet potato into wedges
Slice the zucchini and eggplant into thick rounds
In a large bowl, toss all the vegetables with olive oil, garlic powder, paprika, dried oregano, salt, and pepper until evenly coated
Arrange the vegetables on a baking sheet lined with parchment paper, making sure they are in a single layer and not overcrowded
Bake in the preheated oven for 25-30 minutes or until the vegetables are tender and golden brown, flipping halfway through
Once done, remove from the oven and let them cool slightly before serving
Serve with your favorite dipping sauce or vegan aioli
