Slow Cooker Chili Mac
Slow Cooker Chili Mac is an easy comforting dish made right in your crock pot! It's perfect for busy days when you want a hearty meal ready when you come home. The combination of chili and macaroni with melted cheese makes for a deliciously satisfying dinner.
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 1 can 8 oz tomato sauce
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups uncooked elbow macaroni
- 1 cup shredded cheddar cheese
- Optional toppings: chopped green onions, sour cream, diced avocado
Instructions:
In a skillet, brown the ground beef with the onion, garlic, and bell pepper until beef is no longer pink and vegetables are tender
Drain excess fat
Transfer the cooked beef mixture to the slow cooker
Add kidney beans, diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, salt, and pepper to the slow cooker
Stir to combine
Cover and cook on low for 6-8 hours or high for 3-4 hours
In the last 30 minutes of cooking, stir in the uncooked elbow macaroni
Cover and continue cooking until macaroni is tender
Once macaroni is cooked, sprinkle shredded cheddar cheese over the top
Cover and let it melt for a few minutes
Serve hot with optional toppings such as chopped green onions, sour cream, or diced avocado
