Vegan Tacos
These vegan tacos are a healthy and flavorful alternative to traditional tacos. Packed with black beans, corn, fresh vegetables, and a zesty lime dressing, they are sure to satisfy your taco cravings.
Ingredients:
- 1 cup cooked black beans
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1/2 cup diced avocado
- 1/4 cup lime juice
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 8 small corn tortillas
- Vegan sour cream and salsa for serving
Instructions:
Cook the black beans and put them in a large bowl
Add the corn kernels, tomatoes, red onion, cilantro, and avocado
Mix the chili powder, cumin, salt, and pepper in a small bowl with a whisk
Toss the bean and vegetable mix with this dressing to coat it
You can use a dry skillet or the microwave to warm the corn tortillas until they are soft and bendable
Place a big scoop of the bean and vegetable mix in the middle of each tortilla
Add vegan sour cream and salsa on top, and if you want, add more cilantro on top
