Egg and Shrimp Salad
A delightful and refreshing salad that combines the richness of hard-boiled eggs with the succulence of shrimp, tossed in a creamy mayo dressing with a hint of dill.
Ingredients:
- 4 large eggs, hard-boiled and chopped
- 1/2 lb cooked shrimp, peeled and deveined
- 1/2 cup mayonnaise
- 1/4 cup diced celery
- 1/4 cup diced red bell pepper
- 1/4 cup diced red onion
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions:
In a large bowl, combine the chopped eggs and cooked shrimp
In a separate bowl, mix together mayonnaise, diced celery, diced red bell pepper, diced red onion, Dijon mustard, and fresh dill
Gently fold the mayo mixture into the eggs and shrimp until well combined
Season with salt and pepper to taste
Chill the salad in the refrigerator for at least 30 minutes before serving
Serve the egg and shrimp salad on a bed of lettuce leaves
