Pork Chops with Mustard and Caper Pan Sauce
Ingredients:
- 4 pork chops
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 3 tablespoons Dijon mustard
- 2 tablespoons capers, drained
- 1/2 cup chicken broth
- 1/4 cup white wine
- 2 tablespoons unsalted butter
- Chopped fresh parsley for garnish
Instructions:
Season the pork chops with salt and black pepper on both sides
In a large skillet, heat olive oil over medium-high heat
Add the pork chops to the skillet and sear until golden brown, about 4 minutes per side
Transfer the chops to a plate and cover with foil to keep warm
In the same skillet, add Dijon mustard and capers
Stir to combine
Pour in chicken broth and white wine, scraping the bottom of the skillet to release any browned bits
Let the sauce simmer and reduce by half, about 3-4 minutes
Stir in unsalted butter until the sauce is smooth and glossy
Return the pork chops to the skillet, spooning the sauce over them
Cook for an additional 2-3 minutes to heat through
